Kochkurs in Chiang mai (Michael about Thaifood)

The main meal consists of traditional Thai soup, a curry dish, a fish dish seved with a simple dip and a stir-fried vegetable dish. Single dishes like rice and noodle dishes (which often are complete meals in themselves) can by chili-hot or relatively bland. Appropriate condiments such as coriander (pak chee), chillies, red and green capsicum (bell peppers), Thai sweet basil and spring onions accompany various Thai dishes. If you are a hoity-hoity Escoffier chef, include ramekins containing fish sauce and soy sauce, but if you are the more down-to-earth Julia Child type, just put the small brand name bottles on the table. No one will mind, but no matter what, it is essential you include fish sauce and soy sauce to compliment any Thai meal. A Thai would die if he had to eat food without this delicious ingredients. Use your imagination in arranging an artistic display of the many colorful Thai dishes you may serve. Keep in mind, presentation of Thai food should please the eye as well as the palate. The farang chefs newly acquired Thai culinary skills are certain to receive aroy aroy accolades from guests.
